GOBI MANCHURIAN
Ingredients
Cauliflower   - 1
Corn flour – ½ cup
Maida – ½ cup
Red chilly powder – 1 tsp
Ginger garlic paste – 1 tsp
Salt – to taste
Onion – 1 big
Garlic – 8 to 10 pods
Tomato sauce – 1 tbsp
Soya sauce – 1 tbsp
chilly sauce - 1 tsp
Spring onions – ½ cup
green chillies - 2(optional)
Oil – to deep fry

procedure
cube cauliflower into medium size florets.
wash , strain and spread in a towel to dry.
Add corn flour, maida, salt, red chilly powder, ginger garlic paste.

Add water and form a batter.


Add the cauliflower florets to it and marinate well so that all the florets are covered well.

Let it rest for atleast half an hour.
Heat enough oil and deep fry the cauliflower in medium heat and set aside.



Heat a pan and add 2 tbsp of oil and add chopped garlic and fry till the raw aroma goes.

Add onion and spring onion whites .

Add chopped green chillies if using(I have not used here as we prefer less spice)
Add very little salt, soya sauce, chilly sauce, tomato sauce, vinegar in high flame.

Add the fried florets to this and toss in high flame.

Garnish with spring onions or coriander leaves and serve immediately.



Tips
After adding the cauliflower florets to the sauces serve immediately or it will become soggy.
After deep frying the florets you can serve as such as gobi 65 and toss it with sauce and serve as gobi manchurian dry.
For a gobi manchurian gravy add corn flour paste (corn flour mixed with water) to the sauces and a cup of water .Bring it to a boil as per your required consistency and add florets and serve hot garnished with spring onions.
