HEALTHY TASTY BEETROOT CHUTNEY
Ingredients
Beetroot – ½
kg
Red chillies
– 4/5
Tamarind – a
goose berry size
Salt – to
taste
Oil – 3 tbsp
To temper
Mustard
seeds – 1 tsp
Urad dal – 1
tsp
Curry leaves
– few
Procedure
Cut beetroot
into cubes
Take a pan
and add 1 tbsp of oil and red chillies.
Now add the
cubed beetroot to it and sauté till it changes it colour and loses its raw
smell (may be for 3 or 4 minutes)
Let it cool
Now add the
tamarind and salt with the beetroot and grind in a blender to a smooth paste.
Now add some
2 tbsp of oil and add mustard seeds. When it starts to splutter add urad dal
and curry leaves and transfer the beetroot paste to it. Stir for a minute or
two on a high flame and switch off the flame.
Transfer it
to the serving bowl.
Serve with
hot idlis or dosas or even mix it with rice and pack beetroot rice for lunch.
A very
healthy and tasty dish. Especially good for people who are anaemic.
